In the 19th century, this stone wall building was a pub, where travellers on their way came in for a rest. In the middle of the 20th century it has been reconstructed and used as a dwelling house. Only in late 80-ies it has been adjusted to bake bread. Amount of the baked bread was not big. N. Bomis Bakery “ Lielezers” Ltd. has been founded on 5th June, 1991, and it is set up and run by the solely owner Normunds Bomis.
Our speciality is rye breads - the source of strength and energy!
The bakery Lielezers has become one of the leading rye bread producers in Latvia. Its pride is a real rye bread which is baked by the ancient methods and recipes, and the value of which is comparable to the best class cognacs that are produced from special grape spirits and aged in wooden tubs. The scalded dough is prepared and ripened for twenty four hours in our made aspen-tree tubs which guarantee high quality and a unique taste of bread. In order to bake scalded bread, flour of special quality is needed, which we provide in our own mill. No appliances are used in dividing and forming the rye dough. Amounts of bread
production grew alongside with increasing demand for it. Thus, 36 workers were
employed in the bakery up to 1995, but now there are 130 constant employers who
produce around 13 000 loafs of bread daily.
During the first three years the enterprise produced rye bread only, but later started to bake also white bread.
Production of rye bread even since 1991 is managed by the experienced master crafts-persons Lasma Bome and Dzintars Kalnins. Excellent helpers to the masters are the bakery journeymen who have acquired and perfected this craft in this enterprise.
